Resumen.
La tendencia mundial del mercado de carnes está orientada a poner mayor énfasis en satisfacer los requerimientos de los consumidores en términos de la calidad del producto. Por lo tanto, hay que revalorizar nuestros productos a través de procesos que aseguren calidad, seguridad y trazabilidad certificada, sustentabilidad de los sistemas y bienestar animal. Se define como bienestar animal el estado de salud mental y físico de un animal en armonía con su medio ambiente. En la presente revisión nos abocaremos a la importancia del bienestar animal sobre la producción primaria, transporte y frigoríficos y los efectos que pueden tener en la cantidad y calidad de productos. Para tal fin se realizó una búsqueda bibliográfica, nacional e internacional y consultas a productores, empresarios de la carne y profesionales. Se concluye que son múltiples y complejos los factores que pueden afectar al sector ovino y que para atenuar sus efectos se debe disponer de conocimientos sobre historia de la evolución del ovino, características zootécnicas, etología, buenas prácticas de manejo, infraestructura, equipos y personal capacitado en los establecimientos rurales, transporte y frigoríficos.

Animal welfare in sheep, on farms, during transport and in slaughterhouse.
Summary.
The global trend in the meat market is geared to put greater emphasis on the requirements of consumers in terms of the quality of the product. Therefore, necessary to enhance our products through processes that ensure quality, safety and traceability certified, sustainability of systems and animal welfare. The status of mental health and physique of an animal in harmony with its natural environment is defined as animal welfare. In this review we heading to the importance of welfare on primary production, transport and refrigerators and the effects that can have on the quantity and quality of products. For this purpose was a bibliographic, national and international search and consultations with producers, meat entrepreneurs and professionals. It is concluded that factors that can affect the sheep sector are multiple and complex and to mitigate their effects must be knowledge about history of the evolution of the sheep, zootechnical features, ethology, good practices of management, infrastructure, equipment and trained personnel in rural establishments, transportation and slaughterhouse.
